And that's just what I did. I'm new to this blogging mindset so I didn't think to take a picture of the mounds of tomatoes that I had to chop. But, here is a picture of the pot 'o sauce. Good stuff!
After simmering for about 3 hours, it did reduce to only about 12 cups of sauce. However, we still have a bunch more tomatoes on the vine that will be ripening soon. Hopefully, we will have another harvest before we have to give up our garden to the new homeowner. Now, what to do with all my green peppers? Any ideas?

ReplyDeleteMmmm...green peppers! I use them in lots of my casseroles or crockpot recipes. I have a sausage/speckled butter bean recipe that calls for them. I put them in a baked pasta with hot Italian sausage dish tonight. Salads, snacking, omelette, brownies (just kidding!). Heck, if something calls for onion (what doesn't), consider using peppers, too. :)

Looks good! And I second Rachelle's idea for how to use up those green peppers. You could also make one ginormous crudité platter! Look at me using sophisticated words before 7am - what on earth is the world coming to ;).
ReplyDeleteYour spaghetti sauce looks awesome! Are you going to can it or are you planning on eating it all before you leave? I'm so jealous of your garden and am craving the taste of a real tomato. Green peppers can be cut up and put in the freezer to add to dishes as needed. Or you can share with friends!
ReplyDeleteI was going to say cut them up and freeze them (I think your mom said the same) or make stuffed peppers (yum) and freeze those! And you could freeze some of your sauce to go along with the stuffed peppers.
